At its core, a grease trap is a container that kitchen wastewater passes through prior to entering the sanitary sewer lines. Its purpose is to catch and contain grease - or animal fats and vegetable oils - through a process called gravity separation. Due to the fact that grease is lighter than water, it floats to the top and creates a distinct layer. The trapped grease is held within the trap using a series of baffles, while clean water is released from the bottom and enters the sewer line. Over time, as more and more grease accumulates, a visible "mat" forms on the surface of the grease trap. Once this layer becomes significant, it's time to clean the trap.
